Wild Arctic cold-water prawns
Cold-water prawn lives in cold sea where the temperature is usually between 0–8°C. Slow growth in a cold environment gives the prawn its fresh and mild flavour, along with its natural reddish colour. It lives on the seabed at a depth of 100–700 metres and feeds on small crustaceans and plankton.
Cooked and peeled cold-water prawns are cooked in their shells, peeled and then flash-frozen to preserve the product's freshness, flavour and quality. Finally, an ice glaze (glassering) is applied before the product is fully frozen, to ensure maximum quality and shelf life.
Pandalus borealis is the most common prawn species in the North Atlantic Ocean. It is caught off the coasts of Iceland, Greenland, Canada and in the Barents Sea. The flavour and texture can vary depending on the fishing area and the season.

Origin of our prawns
Icelandic Centre
Pandalus Borealis
Where possible, we use fresh Icelandic prawns caught off the coast of Iceland. Prawn trawlers are usually at sea for 5–6 days, and the catch is processed immediately after landing to ensure maximum freshness and quality. Prawns from the cold waters of Iceland are considered among the best in the world and are known for their fresh, mild flavour with a natural hint of sweetness. The fishing grounds are mainly north of Iceland, a short distance from the Dögun processing plant. There are also rich grounds off the Snæfellsnes peninsula, where a special quota is issued each year. A uniquely flavoursome prawn from this region.
North Atlantic Ocean
Pandalus Borealis
The majority of our cold-water prawns come from partners who fish in the Barents Sea. We also use raw materials from other fisheries in the region, as well as from Canadian and Greenlandic grounds, depending on availability.
Canadian hunting grounds
Pandalus Borealis and Pandalus Montaqui
From Canada we buy both Pandalus Borealis and Pandalus Montaqui.
Pandalus montagui is another species of prawn than Pandalus borealis and is characterised by a slightly stronger flavour and a larger head. The species is mainly caught in Canadian waters in late summer and autumn and is part of our product range, subject to availability.
